Pecan Zapatero

2 1 / 2 cup light corn syrup
Sugar 2 1 / 2 cup granulated sugar
1 / cup butter, melted 3
1 teaspoon vanilla extract tea
5 eggs, lightly beaten
3 cups coarsely chopped walnuts

Zapatero Crust

1 cup rolled oats (the 1 cup regular rolled oats in a blender or food processing)
1 cup of raw flour (or regular all purpose flour)
Butter 1 / 2 cup
1 / 4 tsp. Salt
1 / 4-1 / 2 cup cold water

Preheat oven to 350 degrees F.

Spray 9 x 13 inches with a Teflon spray.

Filling:

Mix in a bowl: sugar, syrup, eggs, butter and vanilla and mix well.

Pour 1 / 3 of mixture into the bottom of the pan.

Add walnuts to fill the remainder and set aside.

Now that the crust:

Mix oatmeal, flour and salt in regular medium or large bowl. (I'm in my stand mixer, but a hand mixer will probably not work.)

Cut butter into small pieces and add the flour mixture.

Cut the butter into the flour mixture to the intensive careng pastry blender or fork until a thick consistency of food.

Add cold water a little at a time, stirring until the dough forms a ball along the twigs. You can only have 1 / 4 cup water.

Place dough on a lightly floured surface and knead gently until no longer sticky.

Pour batter into 9 x 13-inch rectangle.

Carefully lift the dough and rolled into a pot on the filling mixture. You can fold the dough in half, thus easier to move. Whether it breaks and must be in the pan, which is after all a shoemaker to be rebuilt.

Pour remaining filling on the dough.

The baking time is about 50 minutes or until the center begins to increase.

Remove from oven and cool 20 minutes before serving.
